CMYK is essential for a company brand guide. Ask the printer again, it's a simple, straightforward question. If they can't answer such a basic question, that does not speak well of their professional standards. This is common practice and very much standard procedure. I do it all the time (and get straight answers everywhere).
That said, if this a general guide and not necessarily tied to this particular printer, it might be better to specify a profile that is commonly used as general-purpose in your area. This depends on where you are. Here in Europe, it would be either ISO Coated v2 300% (eci) or Coated FOGRA39.
In the US, I suppose US Web Coated (SWOP) v2 would be on any list, not because it's necessarily right for the purpose, but simply by virtue of being the Photoshop default. Printers must be getting loads of this. Even here in Europe, where that profile is never used anywhere, lots of people still use it just because it's the PS default and it never gets changed into something more appropriate.
