Because you don't use if for the finest level adjustment that requires a colour managed environment. Instead you do broad brush adjustments when you just find yourself with a few minutes on the train or in the pub. This means that when you are back in your a colour managed environment, the donkey work and contemplation is done, and all your time can go into the fine tuning.
